3 Ingredient Cacao Bars
Yield: It depends how big you make them but about….. 8?
Time: 5 mins making, 30 mins chilling
Equipment: Blender, loaf tin (optional, I didn’t use one)
Ingredients:
1 cup sunflower seeds (or any seed or nut, sunflower are just very cheap)
1.5 cup dates (I use dried because I can’t afford medjool just for the lolz)
1/3 cup cacao powder
Pinch of salt
Optional extras: 1 tbsp maca/lucuma/baobab powder, 2-4 drops orange oil (doTERRA do a food grade one), 2-4 drops mint oil (again, doTERRA), 1 tsp ground ginger, 1 tsp ground cinnamon, 2 tbsp hulled hemp seeds, 40g choc to drizzle on top (don’t blend choc into it)
Recipe:
Blend the sunflower seeds, cacao & salt (and any additional bits) till a fine powder - this will probably need a few mins unless you’ve got one of those crazy blenders… Which I do not :-)
Add the dates and blend, keep pushing the mix down from the sides, for some reason the dough will defy gravity and try not to be blended. JUST KEEP GOING! Till it’s a really sticky ball.
Shape into bars or squash into a lined loaf tin and freeze/refrigerate for at least half an hour till it’s SOLID.
You can melt some chocolate to drizzle over and top with random seeds and goji berries like I did or you can keep it basic but delicious and just store them in an airtight box in the fridge for like a week.
